These salted caramel & chocolate chip protein balls are a taste of heaven, combining together all of our favorite things: nut butter, vanilla whey protein, coconut and chocolate chips! They are also packed full of healthy fats and protein, making them great for a pre-workout energy boost or a mid-afternoon snack in the office, and will keep you feeling full.
Blend together the flour, protein, salt, coconut oil, syrup and nut butter. Once blended, remove the mixture from the blender/processor, and using your hands, mix in coconut and cacao nibs until it is dough like and combined.
Roll into medium-sized balls and set in fridge or freezer. Should make around 10-12 balls (depending on how much mixture you eat while you make!)
