As a vegetable that packs a lot of health benefits, carrots are best known for being loaded with beta-carotene, which is converted into vitamin A in your liver and is an essential nutrient for good vision (helping you see in the dark!). The night before, preheat your oven to 180c and roast your purple carrots in the coconut oil, cinnamon, and 1 tsp maple syrup until very soft - this should take around 50 min - 1 hour. 

Once the carrots are cooked and cooled, blend in a food processor with the yogurt, protein, extra cinnamon and an extra dash of maple syrup to taste. As you're blending, add a splash of milk if needed to get a smooth but thick consistency. 

Serve with extra yogurt, fruit, and granola if preferred.
