Add all your ingredients (except the toppings!) to a high-powered blender and simply blend until silky smooth.
Place a frying pan on a medium heat, grease lightly with your oil of choice and wait for the pan to heat up. Once there’s a slight sizzle, add roughly two tablespoons of batter.
Once the pancake has started to set, and is nice and cooked on the bottom (top tip: there should be bubbles starting to form on the surface), give it a flip!
Then, simply repeat this step until you run out of pancake mix. Stack them up and add your toppings - the more peanut butter the better!
