Preheat your oven to 350f. Place your rolled oats on a tray and toast until lightly brown - this should take about 10 minutes.
Whilst your oats are toasting, add your dates to a food processor with the banana, maple syrup, and peanut butter. Pour into a bowl and stir in all your dry ingredients.
Press into a lined baking tray so the mixture is about 1 + 1/2 inches thick, and refrigerate for approx. 4 hours before enjoying.
