These are the ultimate chocolate chip cookies for those of you looking to snack smarter. Not only are they low in sugar, but they are packed full of protein and made using Spelt flour which means they are great for those following a FODMAP diet...
Preheat the oven at 350f and line a baking tray with baking paper.
Combine the Splenda and coconut oil until the mixture is smooth. Then add your protein powder, flour, baking powder and vanilla extract. Again mix until smooth and evenly combined.
Now mix in your eggs and chocolate chips.
Take ice cream scoop sized balls of the mixture and place them on the baking tray you have pre-lined. pat the top slightly down to encourage the cookie shape to develop in the oven.
Bake for 15-17 minutes until slightly golden and enjoy!
